Gyuto - Ginsoku III
The Gyuto Ajairu is a very thin blade with a symmetric taper and flex.
This was one of the first blades I made with the new stone wash finish.
Like a traditional gyuto, it has an even balance between rock and flatness for all techniques of cutting.
Excels for the advanced technique of push/pull cuts.
Deep compound and convex bevel geometry, it is an incredible tool to be used every day.
The steel is RWL34 made by Damasteel. It is to date the most expensive mono steel per inch for its incredible attributes to edge retention and durability.
