Kiritsuke - Yoru
This is an ode to traditional Kiritsukes that have more of a flat belly with a slight curve that focuses cutting technique to precision slices. Paired with 3600 year old Bog Oak wood and copper bolster for flow from handle to blade.
This kiritsuke has an incredible balance of food release that pushes food off the blade.

High Carbon steel naturally oxidizes. It is favored amongst cook and professional chefs for its ease of sharpening and razor bone edge. After use, it will patina, call it your own culinary footprint in your blade. A simple wipe down is necessary after use. Apply mineral oil.
