Sujihiki - Akuma VI
This Sujihiki is, for lack of better word, incredible to use.
It is the longest Blade I have ever made at 380mm/15" Edge length.
The purpose of such a long blade isn't for show, it is intended for "one slice" to make the cleanest cut in flesh.
The hardened core is surrounded by wrought Iron which is one of my personal favorite aesthetics to see in a blade.
This is the first and last knife at this length I will ever make making this a special limited edition.
The process of edge geometry started with a flat grind and then working into convex

High Carbon steel naturally oxidizes. It is favored amongst cook and professional chefs for its ease of sharpening and razor bone edge. After use, it will patina, call it your own culinary footprint in your blade. A simple wipe down is necessary after use. Apply mineral oil.
