Sujihikis are the japanese version of a slicing blade. The blade is a double bevel blade which makes it for both right and left handed uses.
This blade is especially long for the sole purpose of "one slice" yielding a clean cut on any food you desire to fabricate. Meat, poultry, fish, BBQ etc. will stand no match to this formidable blade.
