Sujihiki - Koi V
This Sujihiki is much inspired as a hybrid of a Kiritsuke profile. It is also the first sujihiki I have made with an S grind making this slicing knife incredible to cut with with aid of food release.
This Sujihiki comes with some beautiful touches of a koi fish engraved on the backside bevel.
The process of edge geometry started with a flat grind and then working into convex which rounds both sides of the bevels rounding and thinning the edge purposefully to make it cut protein smooth and seamlessly.
The steel itself has a Nitro V core, which has been of late, now becoming my favorite type of stainless for its ease of sharpening and edge retention.
