The Sujihiki Kasen takes on a traditional sakimaru profile with a twist.
An added compound technical grind on both sides of the blade makes slicing protein much more seamless.
This type of implemented bevel work is rarely seen however the gains are unmatched.
This knife is a specialty blade standing at 12 inches of edge length for "one slice" cuts making it a joy to use on any type of meat.
