The Karasu has a highly controlled convex and compound bevel making this knife perform exceptionally. Pleasing to the eye with dynamic copper running through, this blade is a joy to be using as a daily driver with a stone cold edge with high hardness and retention.
A traditional Unagi Saki is single bevel, this however was convex ground to double bevel making it universal for any user.

High Carbon steel naturally oxidizes. It is favored amongst cook and professional chefs for its ease of sharpening and razor bone edge. After use, it will patina, call it your own culinary footprint in your blade. A simple wipe down is necessary after use. Apply mineral oil.
