The Majime Chronicles
I spent years in professional kitchens before I ever picked up a hammer. I knew what it meant to stand on your feet for twelve hours, to care about something most people never think twice about. When I started making knives, I thought that was the whole story.
It wasn't.
The more time I spent with chefs, the more I realized the knife was just the beginning. Behind every person who feeds people for a living is a life worth knowing. A philosophy. A sacrifice. A reason they keep showing up.
The Majime Chronicles is my attempt to capture that. I travel, I listen, I ask the questions nobody else is asking. And at the end of it, I make them a knife. Something built for them specifically, by someone who understands what they do.
This is the series I wish existed when I was still behind the line.
This episode was filmed in Texas with Chef Thomas Billie, a renowned chef who won Best Chef by Michelin.
