The Bunka Hoseki V is a workhorse that has a taller heel for added knuckle clearance and comfortability. Quenching this high carbon steel in what we call "Fast Quenching Oil" locks in the hardness making this knife screaming sharp.
The curvature on the edge allows for precision cuts as well as any technique the user is used to using this replace your daily chef knife.

Like all knives, the S grind makes this knife cut optimally which makes fabricating any food easy and seamless.

High Carbon steel naturally oxidizes. It is favored amongst cook and professional chefs for its ease of sharpening and razor bone edge. After use, it will patina, call it your own culinary footprint in your blade. A simple wipe down is necessary after use. Apply mineral oil.
