Honesuki Hybrid Kazoke II
Exactly the same consistent Grind as the Kazoke I, the Kazoke II has one variation and that is the handle being African Blackwood.
While the profile of this blade is much like a honesuki this is more like a hybrid of a petty knife with all the advantages.
The bevels are true convex, meant to be used for anything universally and is definitely the underdog of the kitchen arsenal.
Petty Knives usually lack enough height for your knuckles when cutting on the cutting board, I raised the height of the heel so it sits very comfortably and will never have that issue where your hand hits the board.
52100 High Carbon Core is a highly loved carbon steel among chefs and knife makers for its easy sharpening and higher edge retention than what you would find commercially.
