This Gyuto draws inspiration from a Deba. Universal and easily can be treated like a general chefs knife but with a taller height for knuckle clearance and a flat edge for push pull cuts. Entirely my go to in the kitchen.
Although not as thick and cumbersome as a deba it has the strength and sharpness to fabricate protein fluently.
This hybrid was ground like a my high end blades as expected. Convex and compound for food release and ease of resistance.

High Carbon steel naturally oxidizes. It is favored amongst cook and professional chefs for its ease of sharpening and razor bone edge. After use, it will patina, call it your own culinary footprint in your blade. A simple wipe down is necessary after use. Apply mineral oil.
